    8VAC20-780-560-F · Based on a review of documentation and interview, the center did not ensure that when choosing to provide meals and snack, they followed the most recent, age-appropriate nutritional requirements of the Child and Adult Care Food Program of the United States Department of Agriculture (USDA).

    Evidence: 1. On 6/26/2023, the inspector reviewed a menu that included June 5th-9th, June 12-16th and June 19-23rd. Of the 15 days reviewed, nine (9) breakfast meals did not meet the requirements. Breakfast must consist of three (3) components to include fluid milk, a vegetable, fruit or portions of both, and a grain. Nine (9) breakfast meals were observed to be missing the fruit or vegetable component. 2. Of the 15 days reviewed, four (4) snacks did not meet the requirements. Snacks are required to consist of two (2) of the five (5) components which are fluid milk, meat or meal alternatives, vegetables, fruits, and grains. Grain-based desserts do not count towards meeting the grains requirement. On four (4) days: cookies, a grain-based dessert, were served which resulted in the snacks containing only one (1) of the two (2) required components. 3. Of the three (3) weeks reviewed, the menu did not identify at least one (1) serving per day of a whole grain rich component as required. 4. Administration acknowledged that the menus did not meet the requirements of the Child and Adult Care Food Program of the United States Department of Agriculture (USDA). Administration stated that they had been in the process of revising their menus and food policies.
