(8) The temperature of TCS foods must be 41 degrees Fahrenheit or below, or 135 degrees Fahrenheit or above, at all times, except during necessary periods of preparation. A few of the classroom refrigerators were reading slightly above 41 degrees at the time of the onsite inspection. This could be due to it being close to lunchtime when the refrigerators would be in use. I advised turning down the temperature and monitoring them to make sure they are able to maintain a temperature below 41 degrees. Bureau
